    Fantastic idea! For the uninitiated or plain naive, why is gluten bad (ie what harm does it cause nutritionally?

    Hi Rui,
    Great question! And really, gluten is only bad if one cannot tolerate it. Gluten is the protein in wheat, barley, and rye that helps all of those breads, pastas, and pastries stick together.

    Celiac Disease is an autoimmune response of those with a gluten-intolerance. The response occurs in the small intestine, flattening the villi, and causing symptoms such as upset stomach, bloating, fatigue, slow growth in children, and a number of other symptoms- read more about it at http://en.wikipedia.org/wiki/Celiac_disease. So for those with celiac disease or even a lesser sensitivity, cutting out gluten in the diet can greatly improve energy, digestion, etc.

    It may help to think of it similar to lactose intolerance- it’s not a fad, it just is. And, it’s not for everyone- some people can ingest gluten and have absolutely no problems. But for me, personally, I feel that I have more energy, my skin looks better, and I have better concentration when I’m not eating gluten.

    I just wanted to ask about the .. over the u in Bluma. Is there a Finlander in the house? Well, all the cardamon reminds me of my grandmother!

      Hi Anon,

      I’m so sorry for my (VERY) tardy reply. The umlaut pays homage to my german ancestors who were bakers. Bluma is a given-name that means ‘to bloom or to grow’ and I thought that to be a fitting name for a new business.

    Hi Kimberly,

    I had some of your products at the little coffee-shop near Food Front Co-op in NW PDX. They’re very good. I also do g.f. baking, and teach g.f. baking and cooking classes. I’m an RN with celiac disease, and I do health coaching and quite a bit of writing on c.d. and gluten intolerance.

    If you lived closer, I’d see I’d love to borrow your kitchen for a class. IT’s very hard to find good g.f. dedicated kitchen space for classes.

    I also wanted to let you know I added a link to your business on my website, and that your website is very appealing. Good luck with your business.

    I didn’t happen to notice if you were at the annual GIG food fair on Saturday, but I was in my own booth most of the time. IF you were, how did it go? IF not, you might consider attending it next year. I can provide more details.

    I was wondering how I would find you guys? I would love to try your stuff? Also if you would be interested in doing gluten free vegan cookies bouquets. I have doing lots for friends and I would like to find a company to work for. I have been decorating cakes/cookies for about 8 years. I am have been gluten,soy,dairy and egg free for about 4 years.

    Thanks for your post. I am currently gluten, dairy, egg, and soy free as well! The health benefits make it all worth it.

    Right now bluma bakery is just a one woman show focusing mostly on sweet breads. Hopefully one day I’ll be able to hire employees :) It sounds as though you have some great experience under your belt- best of luck finding your place in the gluten-free baking world.

    This is such a late reply to your post and I apologize! bluma bakery has actually moved out of state (hence my delay in getting back to you). I am now conducting business from Chandler, Arizona- where my husband and I have recently moved. If you’re ever in the area, please look me up! I hope to be doing business with local coffee shops and selling at the Farmers Markets.
